Double Duty Dinner #1: Roast Chicken Tonight, Chicken Soup Tomorrow

This is the recipe that started the whole “Double Duty Dinners” idea for me, so it felt right to kick things off here. Are you ready?

The Plan

Night One: Simple Roast Chicken

Nothing fancy — a whole chicken, salt, pepper, garlic, a little butter under the skin, and into the oven it goes in my Cast Aluminum Roasting Pan. Serve it with whatever sides you’ve got going (roasted veggies, mashed potatoes, a salad — whatever fall night you’re having). This is your “real dinner” night.

The trick is roasting ONE chicken but mentally splitting it in half: eat what you need tonight, and set the rest aside — meat, bones, all of it — before you clean up.

Night Two: Chicken Soup

The next night (or two nights later, whenever works), that leftover chicken and those bones become soup. Toss the carcass in a pot with water and a bay leaf, and let it simmer to make broth while you chop onion, carrot, and celery. Use the broth you need with the shredded chicken and chopped veggies; and store the rest for another day (it freezes well). You’ve got a completely different meal from completely different-feeling effort — because most of the work already happened two nights ago.

Why This Works So Well Right Now

Fall is exactly when soup starts sounding good again, and this method means you’re not starting a soup from scratch on a Tuesday when you’re running on fumes. You’re finishing one.
