5 Weeknight Dinners for the First Week Back to School

Let’s be honest about the first week back to school: nobody’s Pinterest-perfect. Backpack and school supplies everywhere, new schedules nobody’s adjusted to yet, and dinner needs to happen anyway. This week’s lineup is built for exactly that kind of chaos — fast, low-effort, and forgiving if it’s 6:40pm and you’re just now thinking about food.

Here are five ideas that don’t require a recipe, contains minimal ingredients, and doesn’t take a ton of time:

1. Sheet pan chicken and veggies

Everything on one pan, one temperature, minimal babysitting. Chop, toss with oil and seasoning, roast. Cleanup is one pan, a cutting board, and cutlery. My go-to is chicken, broccoli, sweet potato, onion, and peppers with Rosemary Herb Seasoning.

2. 15-minute veggie-loaded pasta

Whatever’s left in the produce drawer, diced small with my Food Chopper, tossed with pasta and olive oil. Fast, flexible, and a good way to use up whatever didn’t make it into lunches this week. This is a great way to repurpose some leftovers too!

3. Taco bar, no recipe required

You just need ground meat or meat alternative of your choice and whatever toppings are on hand; everyone builds their own taco or burrito or nachos. Zero stress, minimal dishes, and it works whether you’re feeding two people or six. When schedules vary, prep toppings in advance in the Store & Serve and store in the fridge for easy access for everyone!

4. Breakfast for dinner

This one brings me back to my childhood: scrambled eggs, toast with homemade jelly, and some fresh fruit. This is the “we’re all just surviving tonight” meal and there’s no shame in it.

5. Slow cooker anything

Start it before the morning chaos, forget about it all day, dinner’s ready when everyone gets home exhausted. This is the week to lean on it hard. My go-to is 3-4 chicken breasts, a jar of diced tomatoes, a jar of salsa verde, and 1-2 Tbsps of taco seasoning. It’s perfect for your next Mexican Monday or Taco Tuesday!

None of these require a recipe card taped to the fridge. And that’s the whole point. Some nights we just need simple.
